Tilapia with Lemon Thyme Sauce

Directions

Whisk together flour and stock until no lumps appear

Add olive oil to non-stick skillet and then brush some to lightly coat both sides of the fish

Season both sides of fish with salt and pepper

Over MEDIUM heat, cook fish one piece at a time, about 3 - 4 minutes per side until cooked through; remove and keep warm

Turn heat to LOW and melt butter

Add garlic until it is fragrant and just starting to brown

Add wine and bring to a boil over MEDIUM heat; cook until reduced by half

Take off heat and let cool for 3 minutes

Stir in lemon juice, cream, thyme and salt; simmer over MEDIUM heat for 5 minutes

Turn heat to MEDIUM LOW and whisk in flour and stock mixture, stirring constantly until thickened

Garnish with lemon slices and thyme
