Pot Roast with Winter Vegetables

Directions
Generously season beef with salt and pepper
Sear the meat in a Dutch oven over HIGH for 6 - 7 minutes per side
Remove beef and turn heat to LOW
Add flour and stir for 30 seconds
Add beef broth and deglaze
Return beef and add garlic, bay leaf, and herb bouqet
Cover and simmer for 2.5 hours
Add onions, carrots, parsnips and celery for 1 hour
Remove beef and vegetables
Turn heat to HIGH and reduce by half
Return vegetables
Slice beef and ladle sauce on top
Serve with bread
