Directions

  1. Scrub the clams well and SOAK IN A HANDFUL OF FLOUR FOR 30 MINUTES.
  2. If chorizo is uncooked, simmer in boiling water for 5 minutes.
  3. Bring the 4 cups of water to a boil.
  4. Preheat the oven to 400 degrees.
  5. In a paella pan, heat the oil and lightly brown the chicken pieces both sides; remove and drain on paper towels.
  6. Add the sausage, onions, garlic, and peppers to the pan and fry briskly for 3 minutes.
  7. Add the rice and saffron to the sausage mixture.
  8. Pour on the water, season with salt and pepper, and bring to a boil for 2 minutes, stirring occasionally.
  9. Add the chicken, and cook at 400 degrees for 12 minutes.
  10. Add the squid, shrimp, scallops, lobster, cod and peas, and lay the clams on top; cook for an additional 20 minutes (may have to cook longer if clams have not opened).

2 tablespoons oil1/2 pound lobster meat1/2 pound scallops1/2 pound squid, sliced8 whole clams6 ounces cod, cut in 2" pieces8 large shrimp, peeled and deveined1 pound chorizo, cooked and sliced3/4 pound boneless chicken, cut into pieces1 small onion, chopped1 clove garlic, minced1 small red pepper, shredded1 small green pepper, shredded4 ounces frozen peas1 pound long-grain rice1 pinch saffron4 cups boiling water
