Peppered Pork Loin with Fruit

Directions

  1. Place the fruit in a saucepan, cover with water, and bring to the boil.
  2. Remove from the heat and LEAVE TO SOAK FOR 30 MINUTES.
  3. Sprinkle the black peppercorns on the pork and press them in firmly with the palm of your hand.
  4. Melt the margarine in a large saute pan and when foaming, add the pork.
  5. Cook over MEDIUM heat to seal on both sides.
  6. When the pork is brown, remove it and set it aside.
  7. Add the flour to the pan and cook over MEDIUM heat to brown slightly.
  8. Stir in the stock gradually.
  9. Add the sherry and bring to the boil.
  10. Add the drained fruit and the pork, and cover and cook over LOW heat for 15 minutes, checking for doneness.
  11. Remove the fruit and pork.
  12. Add the cream to the sauce and bring to the boil for 1 minute.
  13. Slice the pork into 1/4 inch pieces and arrange on a sewing plate with the cooked fruit.
  14. Spoon the sauce over the pork and fruit to serve.
