Calamari Fra Diavlo - ITALIAN

Directions

  1. In a stock pot, heat olive oil over MEDIUM heat until haze forms.
  2. Add butter.
  3. Turn heat to LOW and add onions until soft but not brown, stirring frequently, about 5 minutes.
  4. Add garlic and cook, stirring constantly, until soft but not brown, about 2 minutes.
  5. Stir in chopped tomatoes, crushed tomatoes, bay leaves, basil, sugar, salt and red pepper; bring sauce to a boil over HIGH heat.
  6. Turn heat to LOW and simmer uncovered, stirring frequently, for 45 minutes.
  7. Add lemon juice and vermouth; turn heat to HIGH and cook, stirring constantly, for 5 minutes.
  8. Add squid and cook, partially covered, stirring frequently, for about 3 minutes.
  9. Remove from heat and discard bay leaves; add parsley and mix well.
