Crab & Corn Chowder - CAJUN

Directions

  1. In a 4-quart pot, melt butter over MEDIUM HEAT.
  2. Add onion and garlic, and saute for 5 minutes.
  3. Add flour all at once, and stir until blended; cook for 3 minutes, stirring.
  4. Slowly stir in clam juice and chicken broth, then bring to a boil.
  5. Stir in corn, thyme, salt, pepper, and cayenne; reduce heat to MEDIUM and cook,uncovered, for 25 minutes.
  6. Stir in cream, and cook for 10 minutes.
  7. Add crab meat and onions, and cook for 5 minutes.
