Directions
Cook sausage meat in a dry nonstick pan over medium heat until browned and crumbly, 10 to 12 minutes; remove from heat and drain the grease
In a large bowl, thoroughly mix together cream cheese, sour cream, cheddar cheese, corn, cooked sausage, fire-roasted tomatoes, chiles, jalapeño peppers, green onions, salt, pepper and cayenne
Transfer mixture into a baking dish and smooth out the top
Top with light covering of grated cheddar and pinch of cayenne
Bake on a sheet pan until cheese is melted and dip is bubbling around the outside, about 30 minutes
Top with sliced green onions

12 ounces hot Italian sausage links, casings removed2 (8 ounce) packages cream cheese, at room temperature1 cup sour cream4 ounces sharp Cheddar cheese, grated, plus more for topping2 cups frozen sweet corn, thawed and drained1 (14 ounce) can fire-roasted diced tomatoes1 (4 ounce) can diced green chiles½ cup jalapeño peppers, diced½ cup green onions, sliced, plus more for topping1 teaspoon kosher salt½ teaspoon freshly ground black pepper1 pinch cayenne pepper, plus more for topping
