Directions
Mix chicken with salt, pepper, rosemary, thyme, oregano, red pepper flakes, cayenne, garlic, lemon juice and olive oil; REFRIGERATE OVERNIGHT
Preheat oven to 450 degrees
Grease a foil-lined baking sheet with olive oil and place chicken smooth side up
Mix potatoes with oil and salt, and add to the baking sheet between the chicken pieces; bake for 35 minutes
Remove chicken and set aside
Toss potatoes in the fat and bake for an additional 10 - 15 minutes; let rest for a few minutes to release from the foil
Using scissors, cut chicken into bite-size pieces
Whisk together vinegar, olive oil, lemon juice, salt, pepper, parsley and oregano; set aside
Mix together cucumber, tomatoes, red onions, feta cheese, salad greens, chicken, potatoes and salad dressing
