Blueberry Flambe Sauce

Directions
- Scoop out vanilla ice cream into individual serving bowls and place in freezer until needed.
- In a 12-inch skillet, combine preserves, lemon rind and juice; cook over medium heat, stirring constantly, until preserves are melted, about 2 minutes.
- Add half of the blueberries and cook, stirring constantly, for 5 minutes.
- Add remaining blueberries and mix well.
- Pour Cognac over blueberry mixture and ignite shake pan until flame goes out.
- Spoon mixture over ice cream: serve immediately.

2 pints blueberries1 1/2 quarts vanilla ice cream1 cup blueberry preserves1 tablespoon lemon rind1/4 cup lemon juice1/3 cup Cognac
