Directions

  1. Scoop out vanilla ice cream into individual serving bowls and place in freezer until needed.
  2. In a 12-inch skillet, combine preserves, lemon rind and juice; cook over medium heat, stirring constantly, until preserves are melted, about 2 minutes.
  3. Add half of the blueberries and cook, stirring constantly, for 5 minutes.
  4. Add remaining blueberries and mix well.
  5. Pour Cognac over blueberry mixture and ignite shake pan until flame goes out.
  6. Spoon mixture over ice cream: serve immediately.
