Grilled Beef with Texas Dry Rub

Directions
- In a large pan, mix just the cumin, chili powder, paprika, mustard seeds and coriander seeds.
- Toast the spices over MEDIUM-HIGH heat until they start to smoke, about 3 minutes.
- Transfer the spices to a grinder, and add the salt, brown sugar, garlic powder and cayenne; grind the mixture coarsely.
- Evenly spread the rub all over the beef; cover and refrigerate for at least 3 hours.
- Grill the beef over MEDIUM DIRECT heat for 5 minutes, turning once.
- Change the grill to MEDIUM INDIRECT heat, and grill until the internal temperature reaches 130 degrees (about 15 - 20 minutes), turning once.
