Lamb Burgers with Mint Aioli

Directions

  1. Make aioli by mixing together all ingredients.
  2. Toast almonds in a frying pan over MEDIUM LOW heat for 7 minutes, stirring often.
  3. Remove from heat, then chop finely.
  4. Place in bowl and add lamb, bread crumbs, egg, salt, garlic, onion, and 1/4 cup of the mint; mix well.
  5. Shape into 6 patties, each about 3/4 inch thick.
  6. Cook patties on a HOT grill for 10 minutes, turning once.
  7. Transfer meat patties to a platter; sprinkle with remaining mint.

AIOLI:.........................................1 cup mayonnaise1/4 cup coarsely chopped fresh mint4 garlic cloves, minced1 teaspoon grated lemon rind2 tablespoons fresh lemon juice1/2 teaspoon salt1/2 teaspoon pepperLAMB:................................................1 1/2 pounds ground lamb1/4 cup slivered almonds2 tablespoons dry bread crumbs1 whole egg, beaten1 teaspoon salt1 clove garlic, minced1/4 cup onion, minced1/2 cup fresh mint, minced6 buns
