Directions
- Place the fruit in a saucepan, cover with water, and bring to the boil.
- Remove from the heat and LEAVE TO SOAK FOR 30 MINUTES.
- Sprinkle the black peppercorns on the pork and press them in firmly with the palm of your hand.
- Melt the margarine in a large saute pan and when foaming, add the pork.
- Cook over MEDIUM heat to seal on both sides.
- When the pork is brown, remove it and set it aside.
- Add the flour to the pan and cook over MEDIUM heat to brown slightly.
- Stir in the stock gradually.
- Add the sherry and bring to the boil.
- Add the drained fruit and the pork, and cover and cook over LOW heat for 15 minutes, checking for doneness.
- Remove the fruit and pork.
- Add the cream to the sauce and bring to the boil for 1 minute.
- Slice the pork into 1/4 inch pieces and arrange on a sewing plate with the cooked fruit.
- Spoon the sauce over the pork and fruit to serve.
