Chicken Cashew Lettuce Wraps

Directions

Whisk broth and cornstarch until smooth; add lime juice, brown sugar, chile-garlic sauce, tamari and sesame oil

Heat 2 Tablespoons oil over MEDIUM heat until shimmering

Add scallions, shallot and ginger until starting to soften, about 2 minutes

Increase heat to MEDIUM HIGH and add the remaining Tablespoon of oil

Add chicken until no longer pink and most of the liquid has evaporated, about 8 minutes

Add nuts and celery until celery is soft, about 3 minutes

Add broth mixture, stirring frequently, until sauce thickens

Serve in lettuce leaves and garnish with scallions, sesame seeds and chiles; serve with lime wedges
