Directions
Put chicken in freezer for 10 minutes; then chop finely
Mix oyster sauce, soy sauce, fish sauce, white sugar, brown sugar and chicken broth; set aside
In a smoking hot cast iron pan, cook chicken in oil until most pink is gone
Add shallots, garlic and peppers for 2 minutes
Drizzle in a couple of tablespoons of sauce until evaporated
Add remaining sauce until mostly evaporated
Turn heat OFF and add basil; stir until wilted
Serve with rice

2 tablespoons vegetable oil1 pound freshly chopped chicken thighs1/4 cup sliced shallots4 cloves garlic, minced2 tablespoons minced Thai chilies, Serrano, or other hot pepper1/3 cup chicken broth1 tablespoon soy sauce, or as needed1 tablespoon oyster sauce2 teaspoons fish sauce1 teaspoon white sugar1 teaspoon brown sugar1 bunch basil leaves, sliced very thin with a sharp knife (about a cup once sliced)
