Tri-Color Pearl Couscous Primavera

Directions

Heat chicken broth until just boiling

In a saucepan, cook green onions in 1 Tablespoon olive oil over MEDIUM heat for 1 - 2 minutes until just softened

Add couscous, salt and pepper; stir to combine

Add chicken broth, lemon zest and juice until boiling

Add the asparagus and peas, and cook, COVERED, for about 10 minutes, stirring occasionally, until liquid has been absorbed and the couscous is cooked through

Mix parsley, 1 Tablespoon of oil and couscous in a serving bowl

1 3/4 cups low sodium chicken broth2 tablespoons olive oil, divided1 1/2 cups dried Israeli couscousSalt and pepperZest and juice of 1 lemon1/2 pound asparagus, bottoms trimmed, cut into 1-inch pieces1 cup frozen peas, defrosted3 tablespoons chopped fresh parsley
