Sauteed Corn, Mushroom and Arugula Salad

Directions
Sauted mushrooms, butter and salt in oil over HIGH heat for about 10 minutes, until browned
Turn heat to MEDIUM and add garlic for 30 seconds
Add corn, chicken stock and black pepper until liquid almost evaporates, about 10 minutes
Add arugula until wilted
Ingredients
1 tbl olive oil2 cups fresh shiitake mushrooms, sliced and stems removed1/2 tsp buttersalt1 clove garlic, minced2 cups frozen corn1 cup chicken or vegetable stockblack pepperlarge handful of arugula, chopped
