Boneless Pork Chops with Shallots and Apple Cider Reduction

Directions

Preheat oven to 350 degrees

Season pork with salt & pepper

Sear pork in vegetable oil

Add shallots and arrange pork on top

Cook in oven for 7 - 8 minutes

Remove pork from pan

Deglaze pan with vinegar and cider

Cook over HIGH until thickened

Season with salt, pepper and thyme or rosemary

Turn heat OFF and add butter, swirling until melted

Add pork and serve

4 boneless pork chops, 1.5 inch thick8 shallots, sliced thin2 cups apple cider1/4 cup apple cider vinegarSalt and pepperVegetable oil1 Tablespoon unsalted butterFew sprigs fresh thyme or rosemary
