Swordfish with Tomato & Mint Sauce

Directions

  1. In a skillet, heat olive oil over MEDIUM heat until haze forms.
  2. Add onion. Turn heat to LOW and cook, stirring frequently until soft but not brown, about 5 minutes.
  3. Stir in tomatoes, salt and pepper. Raise heat to MEDIUM and cook sauce uncovered, stirring frequently, for 15 minutes.
  4. Add vinegar, sugar and mint. Mix well and remove from heat. Set aside.
  5. In a shallow bowl, combine flour with salt and pepper.
  6. Dredge steaks on both sides and shake off excess (dredge just before sauteing so coating does not get gummy).
  7. In a skillet, heat vegetable oil over MEDIUM-HIGH heat until haze forms.
  8. Add steaks and quickly saute on both sides, about 30 seconds on each side. Drain steaks on paper towels.
  9. Discard oil from pan, and in the same pan, evenly Spread half of the sweet & sour sauce.
  10. Arrange steaks in a single layer on top of sauce and cover with remaining sauce. Cook uncovered for about 10 minutes.
