Swordfish with Tomato & Mint Sauce

Directions
- In a skillet, heat olive oil over MEDIUM heat until haze forms.
- Add onion. Turn heat to LOW and cook, stirring frequently until soft but not brown, about 5 minutes.
- Stir in tomatoes, salt and pepper. Raise heat to MEDIUM and cook sauce uncovered, stirring frequently, for 15 minutes.
- Add vinegar, sugar and mint. Mix well and remove from heat. Set aside.
- In a shallow bowl, combine flour with salt and pepper.
- Dredge steaks on both sides and shake off excess (dredge just before sauteing so coating does not get gummy).
- In a skillet, heat vegetable oil over MEDIUM-HIGH heat until haze forms.
- Add steaks and quickly saute on both sides, about 30 seconds on each side. Drain steaks on paper towels.
- Discard oil from pan, and in the same pan, evenly Spread half of the sweet & sour sauce.
- Arrange steaks in a single layer on top of sauce and cover with remaining sauce. Cook uncovered for about 10 minutes.
