Directions
Insert an immersion blender into the can of tomatoes to puree them
In a sauce pan, cook onions and salt in olive oil over MEDIUM HIGH until translucent, about 5 minutes
Add garlic for 1 minute
Add red pepper flakes, tomato puree and water and simmer over MEDIUM LOW for 45- 60 minutes
Begin cooking pasta
Turn heat to LOW and add 2/3 of basil
Add butter, stirring until emulsified
Add cheese
When almost done, transfer pasta into the sauce
Add remaining basil
Taste for seasoning

4 tablespoons olive oil1 cup diced onion1 teaspoon salt, plus more to taste2 or 3 cloves crushed garlica pinch of red pepper flakes1 can (28 oz) San Marzano tomatoes, blended smooth1/2 cup water (to rinse out can of tomatoes)1/2 cup basil leaves, sliced thinly4 tablespoons cold butter, cubed1 cup grated Parmigiano-Reggiano cheese, plus more for serving1 (8 ounce) package pasta
