Directions

  1. Preheat the oven to 500 degrees.
  2. Parboil the sausages in water to cover for 8 minutes.
  3. Melt the butter in a large flame-proof roasting pan.
  4. Add the grapes and toss to coat.
  5. Add the sausages and push them down into the grapes; cook in oven for 12 minutes
  6. Turn the sausages and cook for an additional 13 minutes.
  7. With a slotted spoon, transfer the sausages and grapes to a heated platter.
  8. Place the roasting pan on top of the stove over MEDIUM heat and add the balsamic vinegar.
  9. Scrape up any browned bits on the bottom of the pan and cook until the liquid is thick and syrupy.
  10. Pour the sauce over the sausages and grapes.
  11. Garnish with parsley.
  12. Serve over mashed potatoes.
