Directions
- Preheat oven to 300 degrees.
- Heat a small Dutch oven over LOW heat.
- Add oil and swirl to coat.
- Add garlic and cook for 5 minutes, stirring occasionally.
- Remove garlic with a slotted spoon and set aside.
- Season beef generously with salt and pepper.
- Increase heat to MEDIUM-HIGH.
- Brown beef in 2 batches; remove from pot.
- Add wine to pan; bring to a boil, scraping pan to loosen browned bits.
- Add garlic, carrot, onion, chicken broth, tomato paste, diced tomatoes, rosemary, thyme, salt, pepper, cloves and bay leaf ; bring to a boil.
- Cover and bake for 2 1/2 hours.
- Taste for seasoning.
- Discard the bay leaf and serve over egg noodles.
