Directions

Mix eggs, water, salt, pepper and cayenne

Brush an 8-inch nonstick pan with olive oil

Grate cheese to be about 1/2 inch deep in the pan

Cook cheese over MEDIUM HIGH until golden brown

Turn heat to LOW and add eggs, COVERED, until cooked, about 1 minute

Fold over
