Directions
Preheat oven to 375 degrees
Brush muffin pan with melted butter
Slice potatoes into slices with mandoline
In a large bowl, thoroughly mix potato slices, salt, pepper, cayenne, rosemary and remaining melted butter
Add cheese, mixing together a portion at a time
Stack potato slices into muffin tins, using smaller pieces at the top
Bake 45 - 60 minutes until soft; if not done but top is browned, cover with foil and continue baking

3 pounds Yukon Gold potatoes, approximately same width as muffin tins, unpeeled1/2 cup melted butter (1 stick)2 teaspoons kosher salt1 tablespoon minced fresh rosemaryfreshly ground black pepper and cayenne to taste3/4 cup finely grated Parmigiano-Reggiano
