Directions
In a cast iron skillet, heat oil over MEDIUM heat until it begins to shimmer.
Add onions, chorizo and garlic; cook for 10 minutes.
Add beef and cook until browned.
Season with salt and pepper.
Add tomatoes, vinegar, cinnamon, cumin, bay leaves, cloves, nutmeg; lower the heat and simmer, COVERED, for 30 minutes.
Add the currants and olives; simmer UNCOVERED for 15 minutes.
Test for salt and pepper.
Serve over white rice.
