Directions

For the dressing, combine the peanut butter, vinegar, lime juice, vegetable oil, soy sauce, honey, sugar, garlic, ginger, salt, red pepper flakes in a blender and process until complelely smooth.

Add the cilantro and process for a few secondes; set aside in the refrigerator until ready to serve.

Combine the cabbage, carrots, pepper, cucumber, edamame and cilantro in a large bowl and toss to combine; serve with peanut dressing.
