Directions
- In a small bowl, mix together the rosemary, salt and pepper.
- Rub mixture on both sides of chicken breasts; set aside.
- In a small saucepan, mix orange juice and vermouth; bring to a boil.
- Reduce heat and continue a low boil for 5 minutes.
- Add maple syrup and boil for 6 more minutes; set aside.
- In a large skillet, heat olive oil.
- Add butter.
- Add chicken breasts; COVER and cook for 5 minutes.
- Turn chicken over and cook for an additional 5 minutes.
- Remove excess drippings from the pan.
- Pour orange-maple sauce over chicken; reduce heat to simmer.
- Simmer uncovered for 8 minutes, basting occasionally, and check for doneness.
- If chicken is done but sauce has not turned into a rich, thick glaze, set the chicken aside and continue simmering the sauce.
