Directions

  1. In a small bowl, mix together the rosemary, salt and pepper.
  2. Rub mixture on both sides of chicken breasts; set aside.
  3. In a small saucepan, mix orange juice and vermouth; bring to a boil.
  4. Reduce heat and continue a low boil for 5 minutes.
  5. Add maple syrup and boil for 6 more minutes; set aside.
  6. In a large skillet, heat olive oil.
  7. Add butter.
  8. Add chicken breasts; COVER and cook for 5 minutes.
  9. Turn chicken over and cook for an additional 5 minutes.
  10. Remove excess drippings from the pan.
  11. Pour orange-maple sauce over chicken; reduce heat to simmer.
  12. Simmer uncovered for 8 minutes, basting occasionally, and check for doneness.
  13. If chicken is done but sauce has not turned into a rich, thick glaze, set the chicken aside and continue simmering the sauce.
